I need canning recipes!

My wifes grandmother stores the meat in a can full of vinegar and salt for a day, then the next day in ice water.

Puts it in a pressure cooker (going to have to get actual time/temp) and cans them with pork fat.

Tastes pretty damn good. Ill see if I can call for the exact process. Apologies for being vague

My freezers are completely filled & there's still sooo much season left! (Plus a jaunt up in Indiana next week...)
Can anyone point me towards some simple recipes for storing in jars?

 

Recipes?   Jam, jelly, and tomato based sauces aside, the bulk of canning is just preservation and you apply the recipe after.  Are you asking about stuff like ready to eat soups etc?   Most soup, pasta, and otherwise "wet" foods can be canned ready to eat.  The common theme is more liquid than solid,  or if not, canned in water or juice (meat for example). 

 

Canning our ground beef has saved us a great deal of freezer space!  We also did a couple of turkeys.
