So what equipment were you guys using. Is that NV or Thermal? I have heard that anywhere hogs have had any hunting pressure, you have to night hunt or you never see them. 

I run a 308 msr 10 that's had quite a bit of work done to it. The scope is a Trijicon reap ir thermal. The device on the side is a Silencerco radius rangefinder. The suppressor is a Q full Nelson. I shoot 130 TTSXs at 2879fps for hogs and 125 nosler BT for everything else. One of the guys ran a 6.8 with an N-vision 50mm and the other guy was running a blackout with an N-vision 50mm and black tips. One of my buddies is looking at a 338 federal or 8.6 creedmoor for next time.

Young ones and smaller ones eat just fine.

They are generally leaner than factory farmed hogs.

Taste can vary depending on what they’re getting in their diet. Interestingly, people often describe it as meatier tasting than regular factory farmed pork.

As with any hunt, I think treating the animal with integrity after the kill has more impact on taste than anything.

yeah that's complete horse dung.  Old boars can be very gamey and not very good to eat or even old sows can not be very good. But like @MacGyver said the younger or midaged ones are pretty good.  I knew a guy in Crossville that loved to hunt them so much he had more meat than he could eat so he would give me sausage patties.  They were so lean you would have to add a little oil to the pan when frying, but they were delicious.

That's good to know. What's your take on the hog population in TN? Again, I've heard a lot of different things. A friend of mine has a family farm in Fentress county(800 or so acres). He says they have never come across evidence of hogs there which surprised me.

Most of my hog hunting is Alabama and Florida - so file accordingly. TWRA has done a pretty good job reducing some populations here in Tennessee.

As a general rule, I’ve found you’ve got to put in the work to find hogs.  We go way back in the woods down in Alabama.

Places where you can bait them may be a different story.
