Alternate ways to Clean a Rooster/Chicken

Our rooster starting going after the kids so he had to go. He was fairly young just starting doing his thing so I knew he would be ok to eat. I know that dipping them in scalding water makes them easy to pluck but I wasn't going through all that trouble for one bird. I started to dry pluck by hand and some areas proved more diificult than others. Ended up quarting then skinning legs and breast. Wasn't my best job. I dId not do him justice as I left some meat.

I viewed some guy on You Tube skin the entire bird whole. Probably should have started off this way.

Rooster sausage, I remember my grant annt making these. She would that the rooster and hold it by it's legs upside down, then she would lower it down to the ground till the neck just touched the ground ( they always held their head at a 90 deg angle) and then she would lay a stick over it's head and put her foot on the stick  and then pull up on the rooster and the head was off. She then took the bird ( after it ran around and bleed out) and laid it on it's back and pinched the breast skin on both sides right below the neck and pulled apart, the skin can right off. She would then take and cut all the meat off the bird and grind it in a hand grinder. Then she would add her splices and grind it agian. She would add some flour and corn meal an egg and make these great sausage patties. What  memory.
