The one coming to the Sevierville exit is a curse for the entire east tn area. I passed them in Texas 10+ years ago with little desire to stop. The gas pump island that seems to never end is an impressive sight though. And being a fan of brisket I researched deep enough to find out it's more like gas station sushi and less like Tx roadside smoked meat lol. And then there is the bucees nuggets that get mentioned a lot. I guess it's worth a visit if for nothing more than saying you been. I've passed the Crossville location numerous times and never stopped. Usually I stop across the road at the Pilot for my coffee and to top the tank. Unfortunately for whatever reason it pays to shop around for anything garden related this year. Neighbor and I were discussing varying "good deals" promoted by the local plant shops vs your big box stores. Turns out you have to be willing to drive around a 30 mile loop to get the best deals. I guess it could be some people are trying their hand at gardening in order to offset rising food cost. Which is ironic considering what I see in the buggies at the checkout.

I'm a believer that the solutions exist. Unfortunately those in charge of getting us back on track are also the ones that got us here. And while there's money to be made on our "symptoms" there will be no cures pursued.

Smoke at 300° until internal temperature is 120°. Pull it, tent it for 30 min and then consume. I dont go by time as much anymore because several variables factor in. What else is on the smoker, thickness and size of the salmon filet, skin on or not,etc. Farmed salmon vs wild salmon also makes a difference.

We maintain a low sodium approach to everything we cook so when I smoke anything its just the meat and the smoke to provide the flavor. I know there's a strong debate over fruit wood for fish but I stick with a hickory mesquite blend with a hot and fast smoke. It leaves the salmon very juicy with a mild smoke flavor compared to some of those store bought smoked salmons that reek of smoke from the moment you open it. What salmon does Costco offer up that you smoke ? Atlantic , Scottish, Chilean ?

I never expected to get the whole story given who the shooter was. I have not be disappointed. I'm so use to a double standard at this point there should be a tiny window in one corner of the screen for the nightly news . I've had that Creed song on repeat in my head since 9/11. That's why there is a pump, lever, and bolt action always loaded and sitting in the front of the safe with the semi's and such. Not that an overnight knee jerk BS ban is gonna make me do anything different but I like options lol.

Nice grab Gurn ! Despite the cosmetic misfortune it's had over the years they are still an odd bird in the S&W world. I sold my last one to another local collector who had to have it more than me.
